I kväll grillade vi fisk i folie till middag. Himla smidigt och framförallt otroligt gott! Jag glömmer lätt bort denna fantastiska grill-rätt, då sommaren är så full av rökig glaze, möra köttbitar och goda korvar. Fisk är ju fantastiskt lättlagat och passar ju både till vardag och fest! Fördelen med dessa knyten är att de kan förberedas och sedan bara läggas på grillen när gästerna kommer! Eller så kan man skära upp alla godsaker, lägga i skålar och sedan låta middagsgästerna själva göra i ordning sitt matpaket.
Jag hade cirka 800 g torsk som jag gjorde 4 paket av, och de blev helt klart generösa portioner!
Till fisken gjorde jag en kall sås på kvarg, majonäs, örter, salt och peppar som vi hade till. Men jag kan tänka mig att en god skagenröra eller varför inte hemgjord aioli skulle passa riktigt, riktigt bra.
Jag gjorde en skåprensning här hemma, tog av det som fanns och detta blev resultatet:
Fiskpaket att lägga på grillen (eller köra i ugnen):
800 g torsk eller annan fisk
1 liten purjolök
3 stjälkar selleri
1 rabarberstjälk
2 röda paprikor
ca 4 msk smör
gräslök
salt & peppar
Riv av åtta ark ugnsfolie, lägg ihop dem två och två så du får fyra ”foliebottnar”.
Dela upp fisken i 4 lika stora bitar och placera ut dem på folien.
Skär ner purjo, selleri, rabarber och paprika i småbitar och fördela över fisken. Lägg en klick smör på varje fisk och avsluta med hackad gräslök, salt och peppar.
Nyp ihop varje paket till en båt, eller tänkt utseendet på en calzone. Placera fiskbåtarna på gallret, rakt över glöden och grilla i cirka 15 minuter eller tills fisken är helt klar.
Självklart kan man fylla sina fiskpaket med vad man gillar bäst. Paprika, oliver, fetaost, små söta tomater, citron och mängder av örter är en variant som är troligt god!
